Bottarga Dell'Isola is Marc Slakmon's passion project. Marc learned to make bottarga from his Tunisian grandmothers and since has made it every year in his kitchen in small batches for his family and friends. Marc now cures, presses, and dries the bottarga with the same care and attention that he learned from his grandmothers and with an epicurean end result in mind.
